In order to prevent unwanted microbiological activity during the grape harvest, the temperature of the berries is lowered. Cooling with dry ice is especially recommended here.
The fresh grapes are cooled immediately after harvesting with dry ice. Both fixed and manual snow horns can be used for this purpose. Alternatively, dry ice pellets can be added manually. The cold gas protects the berries from unwanted premature fermentation.
